The Ex-Pat Californian Chef Bringing Sustainable Dining To The Hunter Valley

George Francisco is an ex-pat Californian chef who now calls NSW's Hunter Valley "home".

A self-described "hippie outsider", Francisco created a sustainable farm and restaurant competing in the area known for its wines and great food.

He said 60 percent of the restaurants fresh produce is grown on site. The team simply take what they need each day.

"We pick in the morning because everything tastes better in the morning," he said.

And sometimes if they run out of food while cooking, they simply run to the backyard and grab some more.

"It'll be like,'Oh we just ran out of beans', grab a couple and run back."

Francisco's passion is explored by the Aussie web series Foraged hosted by popular Sydney chef Jovan Curic.

The show sets about finding foodies around the country who are doing things differently.

"It's really refreshing to see someone caring so much about what they're doing and using their environment," Curic said about Fransicsco.
