Zucchini And Feta Pita Pizza Is Healthy and Delicious

Women of Australia, your attention please. The 2015 National Women’s Health Report conducted by Priceline Pharmacy was released on Wednesday, and the results are surprising.

Investigating the wellbeing of more than 32,000 Australian women, the survey found that the majority are not eating a balanced diet (62 percent) or getting enough exercise (62 percent), with younger women between the ages of 16 – 24 reporting the highest levels of poor nutrition (72 percent) and inadequate exercise (65 percent).

The findings also showed a concerning and growing link between poor mental and physical health, with women who reported poor mental and physical health 4.6 times more likely to skip meals, 1.3 times more likely to have a low fruit and vegetable intake, and 11 times more likely to consume fried foods.

While we all love a bucket of hot chips or greasy burger every so often, these number are alarming. So, to inspire a healthier diet without going full leaf eater, here's a healthy pita pizza recipe, created by nutritionist Melanie McGrice -- and yes, it still features fetta. double win.

INGREDIENTS

  • 1 pita bread
  • 1 tbsp of ricotta cheese (reduced fat)
  • ½ zucchini, sliced
  • 40 grams feta cheese, crumbed
  • 1 tsp of fresh dill, chopped
  • 1 tsp of olive oil
  • 1 pinch of ground black pepper

METHOD

  • Preheat oven to 180°C and line a baking tray with baking paper.
  • Place the pita bread on the baking tray and place in the oven. Cook for a few minutes each side, to make it crispy. Keep a close eye on it as it is easy to overcook it!
  • Take the pita out of the oven and spread the ricotta over evenly. Top with the sliced zucchini, feta and dill. Drizzle over a little oil and season with pepper to taste. Place back into the oven. Cook for 15 minutes or until zucchini is tender and brown on top.
  • Serve and enjoy!
