Gelato has taken on a fad status across Australia this year.
In Sydney, one man has taken it to frosty new heights and experimented with what sounds unconsumable. But it's incredibly cool (pardon the pun), delicious and innovative.
"I always wanted an ice cream shop, so I was setting up, getting everything ready to go, and my architect suggested 'have you tried liquid nitrogen?', said Min Chuan Chai, of N2 in Sydney's Inner West.
"So we started trialing and then we just go, like, 'yeah, maybe this is the path we go'."
Chuan Chai talks to Jovan Curic, host of Foraged TV, about what it takes to create not only a successful new business, but also about what goes into a pot of nitrogen gelato.
