The English muffin. It seems everyone except McDonald's has forgotten about them, all too often pushed aside for artisan sourdough, buckwheat pancakes or some other hipster breakfast trend of the minute.
But not any more. We're bringing the good 'ole English muffin back, and with a vengeance.
Get your toaster out, and get ready.
1. Peanut Butter, Banana and Cinnamon
Generously spread peanut butter (or ABC Nut Butter if you're trying to be partially healthy) on a toasted English muffin. Top with sliced banana and a sprinkle of cinnamon -- which can help lower blood sugar levels.
2. Nutella and Strawberry Slices
Spread Nutella on a toasted muffin, allowing it to cool first so the spread doesn't melt. Then, add some more Nutella (the muffin is merely a vehicle here). Top with strawberry slices.
3. BLT with Garlic Aioli
Fry bacon until crispy in an oiled pan. Meanwhile, top a toasted English Muffin with lashings of garlic aioli, crispy cold lettuce and tomato slices. Finish with the cooked bacon.
4. Smoked Salmon with Dill Crème Fraîche and Capers
Mix together crème fraîche with diced dill and place in the fridge to thicken before spreading. Top with smoked salmon slices and plenty of salty capers.
5. Pesto, Olive Oil Sautéed Mushrooms and Crumbled Feta
Sauté button mushrooms in extra virgin olive oil, adding garlic if you like. Meanwhile, spread basil pesto on a toasted English Muffin and add crumbled feta. Top with the sautéed mushrooms.
