3 Easy Ways To Make Your Roast Veggies Sexy (Goodbye Boring Potatoes!)

Let’s face it, roast vegetables can be boring. All too often they are dry, claggy and flavourless -- which makes it even harder to eat your recommended five serves of veggies a day.

Well, gone are the days of boring roast vegetables.

We’ve spiced them up with three easy, mouthwatering recipes to bring roast veggies from daggy to sexy.

Preheat your oven and you're ready to go.

1. Roasted Moroccan-Style Eggplant and Zucchini

The fragrant blend of ground coriander, cinnamon and cumin give this dish a big flavour-punch, while the lemon juice and chilli add a layer of zing. Feel free to mix and swap any vegetables you like.

INGREDIENTS

  • 1 large zucchini, sliced into thick rounds
  • 1 medium eggplant, sliced into thick rounds
  • 1/2 onion, sliced into wedges
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1/4 teaspoon chilli flakes
  • 1 clove garlic, crushed
  • juice of half a lemon
  • salt and pepper, to taste

METHOD

  1. Preheat your oven to 180 degrees Celsius.
  2. In a large bowl, combine the olive oil, cumin, cinnamon, coriander, chilli flakes, garlic, lemon juice and salt and pepper.
  3. Add in the zucchini, eggplant and onion and stir to coat the vegetables.
  4. Place the vegetables onto a baking tray and roast for 45-50 minutes -- making sure to turn the vegetables half way.

2. Roast Potatoes with French Onion Seasoning

This is a great way to easily add flavour to plain old potatoes -- simply pop to your supermarket and grab a pack of French Onion soup to use as seasoning. Once it coats the potatoes and roasts in the oven, the seasoning crisps up and creates moreish potato bites.

INGREDIENTS

  • 4 medium potatoes, chopped into large cubes
  • 1/2 onion, sliced into wedges
  • 1 sachet French Onion soup mix
  • 3 tablespoon

METHOD

  1. Preheat your oven to 180 degrees Celsius.
  2. In a large mixing bowl, add the French Onion soup powder and olive oil and combine well.
  3. Add in the potatoes and stir to coat evenly.
  4. Roast in the oven for 45-50 minutes -- turning the potatoes half way -- until the potatoes are golden brown and cooked-through.

3. Honey Roasted Dutch Carrots

There's nothing sweeter than Honey Roasted Carrots. The honey complements the natural earthy carrot flavour and is a perfect accompaniment to any roast dinner.

INGREDIENTS

  • 2 bunches Dutch carrots
  • 3 tabslespoons extra virgin olive oil
  • 1/4 cup honey
  • salt and pepper, to taste

METHOD

  1. Preheat your oven to 180 degrees Celsius.
  2. In a large mixing bowl, combine the honey and salt and pepper.
  3. Cut off the tops of the carrots and add the carrots to the bowl. Gently mix the carrots and honey mixture to coat completely.
  4. Bake in the oven for 40-50 minutes, until the carrots are cooked through.
