Not so long ago it was only niche cafes in alternative suburbs that truly catered to vegans, though (thankfully) that's all changing.
Sydney's famous Otto Ristorante, located on Finger Wharf in Woolloomooloo amongst equally prestigious eateries, has identified that the vegan movement isn't a small passing trend and as such has come to the party with a complete vegan menu.
Meat eaters, pipe down -- this is in addition to their regular menu which still boasts an array of quality meat and dairy dishes.
"The full vegan degustation menu started by one of our regular diners asking if we could prepare a vegan menu for her one evening. She absolutely loved it and kept coming back with friends. It challenged us to keep creating new dishes," Otto Head Chef Richard Ptacnik said.
"We also noticed a big influx of requests for vegan dishes and wines. So I felt it necessary to put a vegan, vegetarian and full degustation menu together. The vegetarian menu was a natural step forward for us as our philosophy here is working with seasonal and fresh products, allowing the produce speak for itself."
This news comes after popular Sydney restaurant Yellow, located in Potts Point, shifted to an all-vegetarian restaurant last month.
“I’ve always loved cooking with vegetables and having a solely vegetable driven menu gives me the opportunity to focus on interesting and heirloom varietals, grown by local suppliers. By treating vegetables with the same consideration as protein we hope to show that vegetarian dishes are just as delicious as any other menu item,” said Yellow's Brent Savage.
