Now that we're spending less time at the beach (and probably, ahem, at the gym) and more time cosying up at home, our need for warming -- and carby -- food is on the rise.
But making a mess of the kitchen when Netflix is awaiting isn't ideal. That's where one-pot meals come in.
Not only are these one-pot meals comforting and hearty, but they're incredibly easy to make and don't make much mess. All you need to do is prep and throw in the ingredients, let it simmer away and enjoy.
1. One-pot burrito chicken and rice

Love burritos? Transform the Mexican classic into a one-pot (well, one pan) meal. The black bean and chicken rice dish is super simple, filling and full of flavour, thanks to a range of spices and herbs. Guac does require an extra bowl, but it's worth it.
2. One-pot vegan pasta

What's one thing better than pasta? Rich pasta you can make in one pot, without having to boil water or strain spaghetti. This dish starts with plenty of veggies (use whichever you have on hand), followed by tomatoes, seasonings and pasta. Then simmer until the pasta is al dente.

For those with FODMAP intolerances, this easy one-pot chicken and rice dish is a winner with its fragrant spices, ginger and veggies. Garnish with fresh coriander and mashed avocado.
4. One-pot sweet potato curry

This satisfying red curry only takes 30 minutes to make and is packed with flavour thanks to kale, sweet potato, cashews, spices, curry paste and coconut milk. It's creamy, nutritious and makes perfect leftovers.
5. One-pot pasta primavera

For a creamier (yet still healthy) pasta dish, try this pasta primavera. The key is using almond milk instead of cream and butter, with heaps of veggies and herbs. And Parmesan, of course.
6. One-pot stove top enchiladas

Channel those nachos and enchilada vibes and make these cheesy, spicy, incredible one-pot enchiladas. And you don't even need an oven. The stove top dish uses cut up tortillas, veggies, black beans, cheese and enchilada sauce. And more cheese.
