With the right foods waiting for you in the fridge, eating healthy is a breeze. But what recipes to make? Lucky for you, we have five perfect dishes that'll encourage you to make healthy choices all week.

As part of our month-long Eat Well, Feel Great Challenge, we found recipes for you to prep on Sunday that'll help you make smarter food choices throughout the week -- or at least for part of it. This week we have some healthy winter-inspired dishes. From whole-grain, apple-loaded muffins to butternut squash soup and risotto, these recipes will satisfy your need for comfort food while fueling your body with good-for-you ingredients. 

Without further ado, here are five deliciously healthy recipes to feed you. We also made you a grocery list -- scroll to the bottom to find it.

  • 1 Healthy Apple Muffins

    Yes, healthy muffins do exist! This recipe is sweetened with apples and baked with whole grains. What we love about these muffins is that we can take them on the road with us for those busy mornings. Also, they make a great snack.

  • 2 Roasted Butternut Squash Soup
    Cookie + Kate
    Butternut squash soup makes for a perfect lunch -- and is an awesome dinner too, when accompanied with a salad (see the next recipe). When making this soup, roast double the amount of squash and you'll be halfway done with making the butternut squash risotto we have planned for you as well.

  • 3 Quinoa And Kale Protein Power Salad
    Foodie Crush
    This is the salad to end all salads. It's loaded with healthy proteins -- chickpeas and quinoa -- hits the sweet spot with clementines and also contains the super healthy green, kale. Because it's so hearty, it'll keep for a little while once made (and if you only dress the portion you're eating it'll last even longer). Eat it as a side for dinner or pack it for lunch.

  • 4 Roasted Butternut Squash Risotto

    Nothing says comfort like risotto. And when that risotto is made with butternut squash it becomes one of those healthy comfort food recipes you can feel good about eating.

  • 5 Quinoa Brittle
    Minimalist Baker
    Quinoa, nuts and oats make this brittle recipe wholesome. Great for dessert or that four o'clock afternoon crash.

Pantry items:

Pecans, chopped
Rolled oats
Chia seeds
Coconut sugar (optional, can use regular refined sugar)
Turbinado sugar (optional, just for sprinkling)
White or regular whole wheat flour
Brown Rice
Vegetable broth
1 15 ounce can garbanzo beans


Small orange juice
2-3 apples
1 bunch kale
2 butternut squash
1 large shallot bulb
1 head garlic
1 small yellow onion
Bunch sage
Bunch mint
5-6 clementine oranges
⅓ cup pomegranate seeds
Parmesan cheese
2 eggs
Greek yogurt

Seasonings you might have (but maybe don't):

Pomegranate molasses
Dried mint

Baking powder
Baking soda
Red pepper flakes
Vanilla extract
Maple syrup
Coconut oil
