You may recognise Anna Polyviou from Masterchef. She's the award-winning executive pastry chef at Sydney's Shangri-la hotel.
Then you have Katherine Sabbath. A woman with a sweet tooth and an eye for good-looking desserts enough to forge a cult following on Instagram.
Both women are pushing the boundaries of Australia's dessert industry.
"Before, those cakes used to look good but taste s**t," said host of Foraged, Jovan Curic, referring to the kind of sweets that would win awards.
"Nowadays you're finding they actually taste better than they actually look, which is absolutely insane."
It's because of chef's like Polyviou that taste has actually been re-prioritised.
"I came here and the only thing I wanted to do was change the way hotels operate. I am going to create magic not only for this venue but for the whole hotel," she said.
