Keep Cool With These Easy And Refreshing Cocktail Recipes

Boy, is it hot outside. Sure, a crispy cold beer might hit the spot, but so will these super refreshing cocktails.

Andrea Gualdi (ex-Artesian Bar London) of Maybe Frank in Sydney's Surry Hills reckons they are just what the heat doctor ordered.

Just In Thyme

It doesn’t get much simpler than this when you are short on time -- fresh light ingredients many already have in the fridge/pantry and the cocktail equivalent of a one pot wonder.


  • 50ml gin
  • 1 piece of fresh thyme
  • 20 ml fresh lemon juice
  • 3 teaspoons of caster sugar
  • 20ml egg white -- no whipping required!


  1. Put all the ingredients above into a blender, with a handful (4 or so) ice-cubes.
  2. Blend for 10 seconds.
  3. Pop another handful of ice into a tall tumbler and pour over your cocktail mixture -- using a strainer.
  4. Top up the glass with high quality grapefruit soda -- we use Capi at Maybe Frank.
  5. Garnish with a fresh sprig of thyme, or edible flowers which you can pick up from your local organic fruit shop.

The Sophia

Slightly more sophisticated -- but not too tricky for the home entertainer.


  • 40ml Cocchi Rosa, an aperitif wine from Italy – if you can’t find it in store or just don’t have time, Rose works perfectly too
  • 15ml Fino sherry (a dry, pale sherry)
  • 15ml tequila
  • 10ml rose syrup (there is no reason you can’t purchase this, instructions below to make this at home if you really want to impress your guests)


  1. Combine everything into a mixing glass, anything with a pouring lip at home will work just fine here, and stir gently with a handful of ice.
  2. For the professional touch, pop your desired serving glasses in the freezer prior and pull out just when ready to serve.

Rose syrup


  • 2 part caster sugar
  • 1 part hot water
  • 1 fresh rose
  • 1 teaspoon of rose water


  • Combine into a bowl and leave overnight, strain and keep in the fridge to use as required.
