Noma Takes On 25 Aussie Hospitality Students To Work In Sydney Restaurant

A collection of 25 Australian hospitality students are no doubt sharpening their knives as they prepare to partake in an elite internship program at none other than Noma, the Copehagen-based restaurant which has been four times declared the best eatery in the world.

Renowned chef René Redzepi has brought his culinary talents Down Under with a pop-up restaurant, Noma Australia, due to open officially this week at Barangaroo, Sydney.

Not only has this whipped Aussie foodies into an excited frenzy (reservations for Noma Australia sold out in 90 seconds and the waiting list is a gob-smacking 27,000), it has also afforded 25 hospitality students the experience of a lifetime.

The Noma Australia Vocational Program -- a partnership between Noma Australia, Restaurant & Catering Australia (R&CA) and the NSW Government -- will provide the up-and-coming chefs with on-the-job training and mentoring while they complete their Diploma in Hospitality.

Not a bad way to get your foot in the door.

“The culinary skill and knowledge of René Redzepi and the Noma team is second to none," R&CA CEO John Hart said in a statement.

"Knowledge sharing and up-skilling Australia’s next generation of chefs and restaurant professionals is necessary to grow our sector and promote future careers in hospitality. Too often the sector is seen as a stepping-stone on the way to an alternative career.

“Improving the employment prospects of trainees is a driving force behind the program, along with supporting recruitment tools such as the Discover Hospitality website. These tools connect apprentices and qualified staff with employers as they progress their career in hospitality.”

Noma Australia is set to honour local produce, with abalone schnitzel, fermented kangaroo, crocodile fat and Kakadu plum dust on the exclusive 12-course, $485-per-head menu.

Those lucky enough to have already sampled the fare have given it a solid two thumbs up, with former head chef at the Sydney Opera House, Janni Kyritsis, telling GoodFood, "it has taken a Danish person to come show us how to cook Australian ingredients".

Added photographer and food writer Franz Scheurer: "In all my years of reviewing restaurants, this the first ever 10 out of 10," said Scheurer. "Absolutely stunning."

Noma Australia opened at Barangaroo, Sydney on Tuesday 26 January 2016. It will operate five days per week for lunch and dinner over a period of ten weeks.
