These cookies are lower in sugar, too.

Baking desserts when you're gluten intolerant can be challenging. You have to find the correct gluten-free flours (and the correct ratios) suited to whatever you're making, use the right binding ingredients, and all the while get the same flavour you expect.

Not to worry -- these soft and chewy gluten-free chocolate chip cookies are a cinch to make.

Thanks to almond flour in place of regular wheat flour, the choc chip cookies are rich in flavour and texture. Meanwhile, baking soda adds the necessary lift, butter and almond butter add a golden chewiness, and egg helps bind the cookie dough mixture. All that's left to do is stir in dark chocolate chips, bake the cookies and tuck in.

These cookies are also lower in sugar compared to regular choc chip cookies, and you can fold in whichever extra ingredients you like, including chopped nuts, dried fruit, shredded coconut and cacao nibs. The choice is yours.
