Avid meat eaters are generally pretty knowledgable about beef cuts. They know the difference between a chuck roast and a shoulder steak, and how differently each needs to be cooked. But not many occasional meat consumers know that kind of information, and most have never heard of a bavette cut. Or a merlot, for that matter.

There's a big world of beef cuts out there, and it's time we all learned what's what.
