Avid meat eaters are generally pretty knowledgable about beef cuts. They know the difference between a chuck roast and a shoulder steak, and how differently each needs to be cooked. But not many occasional meat consumers know that kind of information, and most have never heard of a bavette cut. Or a merlot, for that matter.
There's a big world of beef cuts out there, and it's time we all learned what's what. The Cattleman's Beef Board put together a comprehensive chart outlining where each cut of meat comes from, noting if it's a lean cut, and the best way to cook it. Not only will it help ensure you're treating your cuts right, but it can also be the push you need to try something new.
